This Dorito casserole transforms the classic snack into a hearty and wildly tasty meal! All its beautiful layers create a meaty, creamy, cheesy, and mouthwatering dish with a lovely crunch.
It might not be the healthiest of dishes, but it’ll definitely tantalize your tastebuds.
It takes less than 30 minutes to cook, and one batch feeds a huge crowd. It’s delicious, easy to make, and is guaranteed to satisfy. What more can you ask for?
Ingredients
- Cream Of Mushroom Soup – It forms 1/2 of the sauce layer. It’s also what makes it undeniably thick, creamy, and so addictive.
- If you’re not a fan, you can replace it with creamy of celery or cream of chicken soup.
- Canned Tomatoes – This makes up the other half of the rich sauce. I like to use Rotel because it has some heat. But any brand of canned, crushed, and peeled tomatoes is fine.
- Chopped Onions – They serve as the aromatics.
- Ground Beef – Use ground chuck for the perfect balance between lean and fatty. Whatever cut you use, stick to an 80/20 or 85/15 ratio. You don’t want your casserole to be too dry or greasy.
- Crushed Doritos – This recipe calls for original Doritos. They won’t overpower the flavors of the other components of the casserole. But if you prefer an extra cheesy dish, go for Nacho Cheese!
- Shredded Cheddar Cheese – A casserole is never complete without bubbly cheese on top. Classic cheddar cheese works well in this dish. But any cheese with good melting potential will be awesome, too.
Tips and Tricks for Making the Best Dorito Casserole
- Crush the Doritos in the bag. You can easily crush the Doritos by opening the bag and squeezing it with your hand. Or, run it over with a rolling pin. It’s up to you how small you want the pieces to be. But larger chunks add more texture.
- Drain the beef well. This keeps the casserole from being too greasy.
- Add some milk. Control the thickness of the cream sauce by whisking in milk little by little until it reaches your preferred consistency.
- Add a garnish. For extra crunch, garnish the casserole with more crushed-up Doritos after baking.
- Bulk it up. If you want a heartier casserole, add beans to the ground beef mixture. Use canned beans so you won’t have to worry about softening them for hours.
- Throw in some rice. Rice will also make the dish more filling. Just one layer of it underneath the cream sauce will do.
- Add some color. Canned corn will also add a pop of color, flavor, and texture to the casserole. Mix it with the ground beef mixture.
- Spice it up. For extra heat, add green chilies or jalapenos to the ground beef mixture. You can also flavor it with spicy taco seasoning. Or, instead of regular Doritos, use any of the spicier variants.
- Top it off. Garnish the casserole with guacamole, salsa, and sour cream for the ultimate Tex-Mex meal.
- Enjoy it a second time. Cover leftovers with plastic wrap and refrigerate them for up to 4 days. Reheat them in the oven, covered with foil, for 20 minutes at 350 degrees Fahrenheit.

Yes, you can freeze Dorito casserole for up to 6 months! Be sure it’s completely cooled before you store it. Cover it tightly with plastic wrap and aluminum foil.
Reheat it at 350 degrees Fahrenheit for 1 hour and 15 minutes.
