Tips & Tricks

  • I love to use maple-flavored breakfast sausage when I make this recipe. It adds that little boost of sweet flavor to the savory dish. You can also use cooked bacon, diced ham, or skip the meat entirely if you prefer.
  • This recipe makes it easy to throw in anything you have in the pantry: veggies or greens that are on their way out, whatever meat you prefer, different cheeses, milk alternatives, syrup, hot sauce, a variety of spices. You can even make it totally sweet instead of savory; the options are endless. 
  • Adding in a small amount of sour cream will help keep it moist.
  • You can cover your casserole with aluminum foil if it is starting to brown on the edges too fast. Check the browning about halfway through.
  • Pour your mixture into muffin tins for perfect serving sizes. This is a great way to bring this dish to a potluck or when traveling. 
  • Make a Mexican-inspired casserole by using semi-fried corn tortilla pieces, and add in any combination of chorizo, cilantro, beans, corn, salsa, tomatoes, peppers, and spices.

Can I Make Breakfast Casserole Ahead of Time?

Yes! This recipe is perfect for preparing ahead of time.

You can mix everything together, cover, and store in the fridge for a day or two if needed. Then just pop it in the oven when you’re ready to eat it.

Alternatively, you can cook it ahead of time and reheat when ready. Use the microwave or the oven on a low setting to reheat. 

You can also freeze this casserole and reheat for a quick breakfast later. Let it cool entirely before putting it in the freezer and make sure to store it in an airtight container.

I recommend using a disposable aluminum pan with a lid so that you don’t have one of your nice baking dishes in the freezer for months.

Or you can line your baking dish with foil. Once it is frozen, lift the foil-wrapped casserole out of the dish and leave it as is in the freezer to free up your dish.

You can also cut the casserole into serving portions and freeze them for easy grab-n-go breakfasts.

Thaw the casserole overnight and then reheat in the oven for the best texture. Bisquick Breakfast Casserole can last in the freezer for 2-3 months.

What to Serve with Breakfast Casserole 

I like to serve my Bisquick Breakfast Casserole with something a little sweet on the side. I usually go with a fruit bowl or parfait.

Yogurt on its own would be tasty as well. You could also go with a smoothie or sliced fruits like apples, avocados, oranges, or melons.

If you’re a meat-lover, you can up the protein with a side of bacon or more sausage in patty form or serve it up with some toast and peanut butter.

If you need your breakfast to be extra filling, go with more bread. Scones, muffins, banana bread, or buttermilk biscuits with jam all make great breakfast sides. 

And of course you always need a good beverage. Whether you prefer coffee or tea, orange juice, or even a mimosa – this breakfast casserole goes with anything!

Ingredients

  • 2 (12 ounce) packages bulk pork sausage

  • 1 medium bell pepper (chopped)

  • 1 medium onion (chopped)

  • 3 cups 3 frozen hash brown potatoes

  • 2 cups 2 shredded Cheddar cheese

  • 1 cup 1 Original Bisquick® mix

  • 2 cups 2 milk

  • 1/4 teaspoon 1/4 pepper

  • 4 eggs

Instructions

  • Preheat oven to 400 degrees Fahrenheit.
  • Grease a 13×9-inch baking pan.
  • In a large skillet, cook sausage, bell pepper, and onion over medium heat. Stir occasionally and cook until the sausage is browned. Drain.
  • Add the sausage mixture to the baking dish. Add in the potatoes and 1 ½ cups of the cheese.
  • Stir together Bisquick mix, milk, pepper, and eggs. Blend well and pour into the baking dish.
  • Bake for 40-45 minutes or until a knife comes out mostly clean.
  • Top with the remaining cheese, and bake another minute or two to melt the cheese.
  • Let cool for 5 minutes, serve, and enjoy!
