Of course, they taste great for breakfast, but there are plenty of lunch and dinner options, too.
After all, you can add sausage to all kinds of casseroles, including things like lasagna, deconstructed pizza casserole, and hash brown casserole.
Sausage can add protein, a rich, savory flavor, and even a spiciness or herb taste, depending on what type of sausage you buy.
This is by no means an exhaustive list of sausage casseroles, but it does include some of my favorites.

The trick to making a good breakfast casserole is to ensure it contains everything you need to start your day off right – protein, carbs, veggies, and dairy.
This Bisquick breakfast casserole has every bit of that: sausage, eggs, potatoes, peppers, onions, milk, cheddar cheese, and more.
That’s what makes it so good and so filling.
It takes about an hour to make, but you can easily prepare it ahead of time and warm it up later, as it freezes and refrigerates well.
2. Italian Sausage and Rice Casserole
This one-pot stovetop casserole is an excellent option if you’re in the mood for something with lots of veggies and plenty of flavor.
You can whip it up in only 30 minutes, and you only have one cooking dish to wash at the end of the night. For busy moms and dads, that’s hard to beat.
3. Sausage and Potato Casserole
Sausage and potato casserole takes a bit of time to make, primarily because you have to bake it so long to get the potatoes tender.
However, it uses fewer than 10 ingredients, two of which are salt and pepper.
It’s a simple meal to pull together, and even beginner chefs can make it without issue.
4. Italian Sausage and Pepper Bake
Here’s another veggie-heavy sausage casserole that the whole family will love.
Thanks to the garlic, oregano, tomatoes with basil, and red pepper flakes, it has a distinctly Italian flair.
The sausage is juicy and succulent and will almost put you in mind of meatballs. It’s a hearty, scrumptious dish.
5. Dublin Coddle
Tender, garlicky potatoes, thick, juicy sausages, salty bacon, and a cup of stout beer: It’s hard to find anything not to like about the Dublin coddle.
It’s a traditional Irish dish that’s ideal for St. Patrick’s Day or an everyday dinner on a Saturday night.
The only downside is that it takes 2 hours to cook, so be prepared for that.
6. Lasagna
I have a few different lasagna recipes that I use in rotation. This one is my go-to when I want something extra cheesy and easy to make.
You’ll only need seven ingredients (and three of them are cheeses).
Pick up some wavy lasagna noodles, Italian sausage, marinara, ricotta, mozzarella, Parmigiano-Reggiano, and eggs.
That’s all it takes to make this cheesy, tasty lasagna.
7. Italian Sausage Breakfast Casserole
If you’re looking for another option for breakfast, you shouldn’t overlook this Italian sausage breakfast casserole.
It’s supremely cheesy, has plenty of veggies, and features the bold, earthy taste of chives and onions.
To be perfectly honest, the sausage is more of an afterthought on this one.
It tastes good and adds protein, but it’s really all about the cheese and veggies here.
8. Italian Sausage Pasta Bake
The Italian sausage pasta bake is one of the best options if you’re looking for something that smells as good as it tastes.
It will have your mouth watering the entire time it’s cooking.
With only eight ingredients and six steps in the instructions, this is another simple dinner choice that anyone can make.
The only thing I do differently is to add lots of herbs.
To my tastes, this one benefits from fresh garlic cloves, oregano, and a bit of cayenne pepper. Sometimes, I add thyme, as well.
9. Hash Brown Sausage Casserole
Hash brown casserole has always been a breakfast (and sometimes a dinnertime) favorite in my house.
Most of the time, though, it’s even better with a pound of sausage and extra veggies.
This recipe calls for onions and red and green bell peppers. They’ll pair well with the spicy sausage, Italian seasoning, and cheddar cheese.
10. Tater Tot Sausage Breakfast Casserole
If you’re looking for a hash brown casserole with fewer veggies and more cheese, use this sausage casserole instead.
It cuts out the bell peppers and onions and adds a half-cup of mozzarella to the cheddar.
You’ll still get some earthy, herby flavor from the onion and garlic powders, though.
And, of course, if you like the veggies, you can still add them to this one, too.
That’s the beautiful thing about casseroles. They’re highly customizable.
11. Broccoli, Sausage and Cauliflower Casserole
If you’ve ever had broccoli and cauliflower casserole, then you already have an idea of how this tastes; the only real difference is that you’ll add sausage to it, as well.
It’s still the cheesy, garlicky, slightly tangy casserole you know and love, though.
It’s also a great option for those on low-carb or ketogenic diets, as it only has eight net carbs.
12. Cheesy Smoked Sausage and Cabbage and Casserole
Despite how cheesy and overindulgent this casserole looks, it’s actually pretty healthy for those on low-carb diets, too.
It’s also gluten-free and has a pretty decent amount of protein (15.5 g).
The reason it’s so healthy (and so low in carbs) is that there isn’t any pasta in it. Though it may look like there is, that’s actually cabbage.
There’s also sausage, mozzarella, parsley, crushed and diced tomatoes, garlic, onions, bell peppers, and more. It’s a healthy, all-in-one, well-balanced meal.
13. Southwest Sausage Bake
If you’re looking for a bit of South-of-the-Border flair, look no further than the southwest sausage bake.
With green chiles, sausage, Monterey jack cheese, tomatoes, and more, it’s superb.
It takes some time to make, but it’s worth every second of the process. Top it with sour cream and salsa when you’re ready to serve it, and enjoy!
14. Deconstructed Pizza Casserole
This nine-ingredient deconstructed pizza casserole is a spectacular way to enjoy your favorite pizza without all the things that make pizza so carb-heavy (i.e., the crust).
All you’ll need are diced tomatoes, Italian sausage, olive oil, oregano, salt, pepper, fresh mushrooms, mozzarella, and pepperoni.
If you want a vegetarian-friendly option, you can cut out the meat and add more veggies (peppers, onions, olives, etc.).
15. Sausage and Crescent Roll Casserole
It takes only 40 minutes to make this cheesy, saucy sausage and crescent roll casserole. You’ll start with an incredible crescent roll base.
To that, you’ll add your marinara and sausage mixture. Then, you’ll top that with parmesan and mozzarella and bake it for about 20 to 25 minutes.
Top it with whatever you like. Either way, you’ll undoubtedly want a second helping.
16. Stacked Tortilla Breakfast Casserole
Of all the breakfast casseroles on this list, the stacked tortilla one probably has the most going on inside its casserole dish.
You’ll have layers of crispy tortillas stuffed with bacon, sausage, ham, eggs, hot sauce, two different types of cheese, and plenty of herbs and seasonings.
It’s meaty, cheesy, and herb-flavored all at once, and it’s packed with protein.
If you like to have something super filling to get you going in the mornings, this casserole is the one you’ll want.
17. Sausage-Stuffed Mushroom Casserole
If you’re a fan of sausage-stuffed mushroom appetizers, then you’ll love this casserole because that’s precisely what it is, just on a much larger scale.
You’re taking the appetizers and turning them into a healthy, hearty dinner, and you’ll only need 35 minutes to do it.
This casserole’s taste is almost exactly like that of stuffed mushrooms. However, the consistency and texture are much different.
Still, that doesn’t take away from the overall awesomeness of the dish.
