Cheesy Texas Trash Dip Recipe (Mexican Bean Dip)

Warm, gooey, cheesy, and beany. Seriously, where’s the bad here?!

Texas Trash dip is a super cheesy baked appetizer that’ll have everyone coming back for seconds and thirds (maybe even more!).

Since it’s meat-free, it’s perfect for vegetarians and non-vegetarians alike. Plus, it’s full of Tex-Mex flavor. 

It’s easy to make, too. If you bake it in the oven, you’ll have it ready to go in about half an hour.

But if you want to cook it in the slow cooker, you’ll need to prep a couple of hours ahead.

Either way, it’s incredible.

Ingredients 

One of the best things about Texas Trash dip is that it uses only six simple ingredients.

And if you regularly cook Mexican food, you probably already have them in your house. 

Let’s take a look:

  • Cream Cheese: This rich, creamy ingredient will act as the base for your dip. It gives it its thick texture and a decadent, slightly tangy taste. 
  • Sour Cream: Sour cream makes the cream cheese even creamier. It also makes the dip easier to work with and easier to scoop.
  • Refried Beans: The beans add protein, flavor, and heartiness.
  • Chopped Green Chiles: These give the dip its signature zing without adding a ton of heat. 
  • Taco Seasoning: McCormick® is my favorite because it’s slightly spicy and perfectly blended for that signature Tex-Mex flavor. However, you can use whatever taco seasoning you prefer.
  • Shredded Mexican Blend Cheese: You can’t have a cheese dip without plenty of cheese! You’ll add this into the dip and on top of it to make it extra gooey.

You can also top the dip with flavorful toppings, such as:

  • Chives
  • Diced tomatoes
  • Cilantro
  • Sweet corn kernels
  • Extra sour cream
  • Hot sauce

How to Store Leftover Texas Trash Dip

It’s hard to imagine any of this dip being leftover. My family always devours every last bite.

But if you do have leftovers, that’s no problem.

Allow the dip to cool completely. Then, transfer it to an airtight container and store it in the refrigerator. It should stay fresh for up to 4 days. 

Reheat it in the microwave in 30-second intervals. 

Unfortunately, I don’t recommend freezing any leftovers. The dip’s consistency and texture would likely break down when you thaw it.

What to Serve with Texas Trash Dip 

You can serve anything you like with Texas Trash dip. But the go-to for most people is a crunchy, salty bag of tortilla chips. 

However, it also tastes excellent with Fritos, savory pita chips, pretzels, or pretzel crisps.

Certain raw veggies work well, too, as do toasted baguette pieces and crackers. 

You could even make garlicky bread bites to serve with it if you like.

Ingredients

  • 1 1 (8-ounce) package cream cheese

  • 1 cup 1 sour cream

  • 2 2 (16-ounce) cans refried beans

  • 1 1 (4.5-ounce) can chopped green chiles, drained

  • 1 1 (1.25-ounce) package taco seasoning

  • 4 cups 4 shredded Mexican blend cheese, divided

Instructions

  • Preheat the oven to 350 degrees Fahrenheit (175°C) and spray a 13 x 9-inch baking dish with non-stick cooking spray.
  • Add the cream cheese and sour cream to a large microwave-safe bowl. Then, cook for 1 minute on high or until the cream cheese is soft.
  • Mix the cream cheese and sour cream thoroughly with a whisk until it’s a smooth and uniform consistency.
  • Add the refried beans, green chiles, seasoning mix, and two cups of the Mexican blend cheese. Stir until everything is well mixed.
  • Spread the mixture over the baking dish, and be sure to make it flat. Then, add the rest of the Mexican blend cheese on top.
  • Bake for 25 minutes or until the cheese on top is melted.
  • Serve with your choice of tortilla chips, Fritos, fresh veggies, etc. Enjoy!
  • Optional Cooking Method: Slow Cooker Texas Trash Dip
  • Follow steps 2, 3, and 4 from the recipe above.
  • Spray the slow cooker with non-stick cooking spray.
  • Add the mixture to the slow cooker, followed by the remaining Mexican cheese blend on top.
  • Cover the slow cooker and cook the dip for 3 to 4 hours on low.
  • The dip is ready when the internal temperature reaches 165 degrees Fahrenheit (75°C).
  • Serve and enjoy!
