20 Easy Bell Pepper Recipes

There was a time when people mentioned bell pepper recipes, and the only things I could conjure up were pizza, quesadillas, spaghetti, and stir-fry.

Over the years, though, my bell pepper repertoire has expanded, and now I have quite the collection of delicious, savory bell pepper recipes.

Stuffed Bell Peppers with Ground Beef

Bell peppers are excellent because they give you all the wonderful flavor of peppers but without all the heat, which many people just can’t handle.

Another great thing about bell peppers is that you can find them in such a spectacular array of colors!

So if you’re looking for something vibrant to give you a dose of earthy yumminess, these bell pepper recipes are just what you need.

The BEST Stuffed Bell Peppers and More!

Homemade Stuffed Bell Peppers

1. Stuffed Bell Peppers Recipe

Stuffed peppers are always a treat.

They have a wonderful flavor from the pepper itself, but then you stuff them with rice, well-seasoned ground beef, and tomato sauce, and you can practically turn these into a meal.

Plus, they’re surprisingly easy to make, requiring only a little over an hour to prepare and cook.

If you’re looking for something flavorful and filling, stuffed peppers are just the thing.

2. Stuffed Pepper Casserole

If you want all the spice and flavor of stuffed bell peppers but need an even shorter prep time, try this stuffed pepper casserole instead.

It’s cheesy, herby, spicy, and delicious, and you can pull it together in just 5 minutes. It’s a fix-quick meal that the whole family will love.

3. Unstuffed Pepper Skillet

The unstuffed pepper skillet is similar to the stuffed pepper casserole, but you can fix it in only a fraction of the time – 20 minutes, to be exact.

It’s also a lot cheesier and not quite as spicy.

4. Roasted Bell Peppers With Olive Oil

If you’ve never had plain old roasted bell peppers, you don’t know what you’re missing.

Their taste is similar to that of raw bell peppers, but there’s more.

The “more” comes from adding salt, pepper, garlic, red pepper flakes, and dried oregano. Plus, simply roasting the peppers intensifies their natural flavor.

If you’re looking for a healthy, flavorful snack, these are a great option.

5. Grilled Vegetable Skewers

No matter what veggies you use, grilled vegetable skewers always make a delightful side dish, especially if you’re using fresh-from-the-garden summer vegetables.

You can choose any veggies you like for your skewers, but I appreciate those in this recipe, as they provide a great mix of colors, textures, and flavors.

The only thing I do differently is the olive oil. I use butter instead. It’s not as healthy, but it adds a phenomenal depth of flavor that olive oil just can’t match.

6. Bell Pepper Nachos

Before you skip over this recipe because you already know how to add bell peppers to your nachos, take a second to check it out.

These aren’t nachos with bell peppers. They’re bell pepper nachos.

You’ll pile everything you usually add to nachos into these hollowed-out bell peppers – seasoned ground meat, black beans, corn, jalapenos, and cheese.

You can add more if you like, but remember, you’re working with a relatively small surface area, and these are plenty tasty enough as they are.

7. Bell Pepper Pizzas

These mini pizzas on bell peppers are just as fun as the nachos. They’re also a sound choice for those on a low-carb diet.

Start with your bell pepper base. Then coat it in pizza sauce, grated cheese, red pepper flakes, basil, and whatever toppings you like best on pizza.

Go as traditional or as crazy as you like; it’s your pizza, after all!

8. Pepper and Onion Quiche

This quiche is mouth-wateringly good with its crispy crust and gorgeous golden cheese and egg filling, and it has such a unique mixture of tastes.

The feta is bold and slightly pungent, but the fresh herb flavor of the basil helps tone that down some.

The caramelized onions are sweet, while the peppers have that earthy flavor that makes them so incredible.

You’ll also catch undertones of nutmeg, and the buttery crust completes it all.

If you’re looking for something as flavorful as it is hearty, you can’t go wrong with the pepper and onion quiche.

9. Stuffed Pepper Soup

So far, we’ve turned stuffed peppers into a casserole and a skillet dish; now, let’s try stuffed pepper soup.

Actually, I’ve already tried it, and it’s just as yummy as it sounds.

It’s a hearty, chunky, one-pot soup that’s comforting and truly unbeatable on a cold fall or winter’s night.

You’ll start with a base of beef broth, water, tomato sauce, and tomato paste.

To that, you’ll add long grain rice, diced tomatoes, a ton of herbs and seasonings, onions, bell peppers, and ground beef.

If you love stuffed bell peppers, you won’t be able to get enough of this thick soup.

10. Creamy Roasted Red Pepper Rigatoni

Who doesn’t love a one-pot meal that takes 5 minutes of prep and only 15 more to cook?

Plus, it’s vegetarian-friendly and something the whole family loves.

Plus, tender rigatoni pasta with roasted red peppers and parmesan cheese is one of those meals you could eat all the time and never grow tired of it.

11. Easy Pepper Chicken Stir-Fry

Chicken stir-fry is so easy to make; it’s an excellent meal for people who really don’t know how to cook but want to look like they do.

It takes only 30 minutes from start to finish.

It is absolutely overflowing with flavor, and the chicken itself is tender and juicy.

You can serve it by itself, but it tastes better on top of a bed of steamed rice. (I prefer brown.)

12. Pepper Steak Stir-Fry

If you’re in the mood for stir-fry but aren’t feeling the chicken, try pepper steak instead.

The thinly sliced flank steak is so tender that it nearly melts on your tongue.

The sauce is incredible, and the beautiful red and green onions add color and taste. But where this recipe truly shines is in the sauce.

Made with soy sauce, sugar, water, and cornstarch, it pairs perfectly with the garlic and ginger.

It’s a thick, savory sauce with more zing than you could imagine.

13. Caramelized Onions and Bell Peppers

If you’re looking for something to liven up your steak, these caramelized onions and bell peppers just might do the trick.

Not only will they enhance the overall taste with a sweet, smoky flavor, but they’ll also add a splash of vibrant colors that’ll make the whole dish look nicer.

14. Smashed Avocado, Roasted Bell Pepper, and Pepper Jack Quesadillas

Bell peppers on quesadillas are just a matter of course, but these quesadillas are probably different from any you’ve ever had.

You’ll stuff each tortilla with spicy pepper jack cheese, onions, bell peppers, and mashed avocado.

The cheese gets gooey, and everything else takes on a smoky, roasted taste.

If you’re looking for a flavor-packed vegetarian meal that’s easy to eat while on the go, these quesadillas will do the trick.

15. Skinny Low-Carb Bell Pepper Tacos

One glance at these, and you might think they’re just stuffed bell peppers, and in a sense, that’s precisely what they are.

However, you’ll stuff these bell peppers with everything that makes a taco great: ground beef (or turkey), bell peppers, shredded cheese, onions, lettuce, tomatoes, jalapenos, and more.

These are phenomenal, stuffed-to-the-brim tacos, only you don’t have to worry about the carbs from the shell.

You’ll use a crisp, tasty bell pepper instead.

16. Hearty Pepper Chili

When the weather gets colder, there’s nothing I love more than a thick, hearty bowl of chili, and the spicier and chunkier it is, the better I like it.

This chili has everything you could want in a bowl of chili – hot sausage, onions, kidney beans, bell peppers, tomatoes, seasoning, cilantro, and a dash of lime juice.

Top it with sour cream, green onions, cheese, and more cilantro, and you’ll have a spicy, cheesy meal you can’t stop eating.

Plus, the cilantro adds a light freshness that nicely complements the other, heavier ingredients.

17. Chicken Cacciatore

You can’t have a list of fantastic bell pepper recipes and not include chicken cacciatore; that traditional Italian dish is one that practically everyone adores.

Thanks to the onions, bell peppers, garlic, and herbs, it’ll make your whole house smell amazing while it’s cooking, and you’ll be downright drooling long before it ever makes it to the table.

The sauce is delectable, and the chicken is literally fall-off-the-bone, melt-in-your-mouth incredible.

If you make this for dinner, don’t expect to have any leftovers.

18. Easy Chicken Fajitas

You can have these tender, spicy, and smoky fajitas ready to serve in less than 30 minutes, and you’ll only need 11 ingredients to do it.

And six of those come off the spice rack!

When it comes to easy meals that are so good, your guests will be begging for more, it’s hard to beat these easy chicken fajitas.

19. Philly Cheesesteak With Peppers and Onions

You have to love tender, juicy petite sirloin, cooked and seasoned just right and thrown on a hoagie roll with provolone cheese, sauteed onions, and peppers.

Yep! I’m talking about the spectacular Philly cheesesteak, and this recipe for it is one of the best.

It requires only 10 ingredients and takes less than an hour to make enough to serve eight!

20. Philly Cheesesteak Casserole

If you love the idea of Philly cheesesteak but don’t need all the carbs from those thick hoagie buns, make this Philly cheesesteak casserole instead.

It includes everything that makes Philly cheesesteaks so great – the meat, onions, peppers, provolone, and more – but a serving of this bun-less casserole only has six net carbs.

If you’re on a keto or low-carb diet, it’s pretty hard to beat that. Plus, this recipe calls for both garlic and Worcestershire sauce – two of my favorite flavors to combine on anything.
