This copycat recipe makes the moistest, most tender, and heavenly banana bread. Just like the original, this one is packed with super-sweet bananas and topped with chopped walnuts. 

Slathered with butter and paired with a hot cup of coffee, this banana bread makes the most delightful breakfast. 

The best part is, banana bread is incredibly easy to make! I’m no baking expert, and I was able to nail this recipe on the first try. I’m sure you will, too!

Starbucks Banana Bread Ingredients - Baking Soda, Egg, Vegetable Oil, Buttermilk, Vanilla Extract, Ripe Bananas and Chopped Walnuts

Ingredients

Baking soda. It’s the leavening agent that makes the banana bread rise. That’s why it’s important to check if your baking soda is still active! To test, stir in a teaspoon of baking soda into a cup of hot water. It should bubble right away. If it doesn’t, throw it out.

Egg. Apart from stability and structure, it also helps make the bread extra tender.

Vegetable oil. Other recipes call for butter, or both butter and oil. But you’ll only use oil for this one. The oil prevents the flour from absorbing water, making the bread incredibly moist and soft. True, butter makes any baked good ultra-rich, but this banana bread is already packed with flavor, so you need not worry about that.

Buttermilk. It adds moisture to the bread. Sour cream and yogurt both work well, too.

Vanilla extract. It enhances the flavor of every baked good!

Ripe bananas. The key to moist and wonderfully sweet banana bread is over-ripe bananas. I mean super mushy, dark, almost black peel level of over-ripe. They may not look a-peel-ing, but they’re all you need to give your bread that maximum banana flavor.

Chopped walnuts. Another element that makes Starbucks banana bread so irresistible. Walnuts add a wonderful crunch and flavor to the bread.

Tips for Making the Best Banana Bread

  • If your bananas haven’t reached that blackened point just yet, but you want to make banana bread this very moment, there’s a trick to speed up the process. Pop them in the oven! Place them on a lined baking sheet, unpeeled, and bake for 15 to 20 minutes at 300 degrees Fahrenheit.
  • No one wants mushy banana bits in their bread, so be sure to mash your bananas well. You can use a fork, but to make life much easier, just mash them using an electric mixer or food processor.
  • Measure your ingredients accurately. Use the spoon and level method for the dry ingredients – use a spoon to transfer the ingredient from the container to the measuring cup, and level it with the back of a knife.
  • Do not over-mix the batter! Mix the dry and wet ingredients carefully with a spatula – not a mixer. Over-mixing will yield dry and dense banana bread.
  • Aside from walnuts, you can also top the banana bread with chocolate chips. Bananas and chocolate make a perfect pair!
  • Check for doneness at the 50-minute mark. Stick a toothpick into the center of the bread. If it comes out clean or there are a few moist bits sticking to it, it’s done.
  • Do not take the banana bread out of the pan just yet! Give it ten minutes to set, otherwise, your bread will be too mushy. 
  • At the same time, you don’t want the bread to stay in the pan any longer than 10 minutes. The bottom of the bread will turn soggy if you do.

How Long Does Starbucks Banana Bread Last?

Depending on where you store banana bread, it will last from 2 days to up to a few months.

If you don’t plan on keeping the bread around for too long, just store it at room temperature, covered in plastic wrap. This way, banana bread will keep well for up to two days.

You can extend its shelf-life for up to seven days if you store it in the fridge. Make sure it’s at room temperature to avoid mold formation! Also, cover it in plastic wrap so it keeps its moisture.

If you intend to keep banana bread for months, the freezer is your best friend. Here’s how:

Cut completely cooled bread into individual slices and double wrap each in plastic wrap. Then, transfer them into a freezer-safe bag, squeeze out excess air as much as you can, and seal.

Label accordingly, and freeze. Frozen banana bread will last for up to three months.

Thaw it in the fridge or at room temperature until softened and enjoy.

Ingredients

  • 2 cups 2 flour

  • 1 teaspoon 1 baking soda

  • 1/4 teaspoon 1/4 salt

  • 1 egg

  • 1 1/8 cups 1 1/8 sugar

  • 1/2 cup 1/2 of vegetable oil

  • 2 tablespoons 2 buttermilk

  • 1/2 teaspoon 1/2 vanilla extract

  • 3 ripe medium-large bananas, mashed

  • 1/2 cup 1/2 chopped walnuts

  • 1/3 cup 1/3 chopped walnuts (additional)

Instructions

  • Preheat the oven to 325 degrees Fahrenheit. Grease a 9x5x3-inch loaf pan and coat with flour.
  • In a medium bowl, sift and combine flour, baking soda, and salt.
  • In a large bowl, stir together egg, sugar, and vegetable oil until incorporated.
  • Stir the flour mixture into the egg mixture. Pour in the buttermilk, vanilla, and bananas. Mix until combined. Gently stir in 1/2 cup of chopped walnuts.
  • Pour batter into the greased and floured loaf pan. Sprinkle the remaining 1/3 cup of walnuts on top.
  • Bake for 45 to 60 minutes. To check for doneness, stick a toothpick into the center of the bread. If it comes out clean or there are a few moist bits sticking to it, it’s done baking.
  • Cool in the loaf pan for 10 minutes. Remove the bread from the pan and let it cool completely on a wire rack. Slice and enjoy!
