Peanut butter Rice Krispie balls are exactly like you’d imagine them. They’re little balls made with crisp and crunchy Rice Krispies thick and creamy peanut butter. 

Oh, and they’re covered with chocolate, too, for good measure. I mean, how awesome is that?!

These bite-sized goodies sure are delightful. They’re the epitome of the perfect bite!

There are tons of drool-worthy confections out there, but what makes this one stand out is that they do not require baking. Hurray for easy-breezy treats!

Because they’re such a snap to make, you need not wait for the holidays to enjoy these addictive balls. Have 30 minutes to spare?

Ingredients

  • Peanut Butter – You’ll want to use regular peanut butter instead of natural. Natural peanut butter tends to be greasy, which is not easy to coat in chocolate.
  • Butter – For a richer flavor.
  • Powdered Sugar – To sweeten and thicken the peanut butter, making it easier for shaping. Do not use granulated sugar in place of powdered sugar to avoid grainy balls.
  • Rice Krispies – For that wonderful crunch! Regular or Cocoa Krispies both work.
  • Chocolate Chips – Pick ones that are good for melting, such as Ghirardelli wafers. Real, high-quality chocolate works best.

Tips for the Best Rice Krispie Balls

  • Stick a toothpick in each Rice Krispie ball for easier dipping. Use the toothpick to dip the balls in chocolate. Remove the toothpicks once you’ve placed them on a cookie sheet.
  • Line the cookie sheet with wax or parchment paper so the chocolate doesn’t stick to the sheet.
  • Dress the balls with sprinkles or mini-chocolate chips for more crunch, flavor, and color.
  • Chill the balls for 30 minutes or freeze for 10 before dipping them in chocolate. They’ll be warm and sticky post-shaping because of the heat from our hands. Chilling the balls will prevent them from melting into the chocolate.
  • Dark or semi-sweet chocolate is perfect for this recipe because it contrasts the sweetness of the peanut butter well.
  • Whichever chocolate you choose, use one of good quality. The flavor of this confection relies heavily on the chocolate, so you’ll want to use one you actually like.
  • Also, pick chocolate that melts well. I always use Ghirardelli wafers. They’re super smooth and silky when melted.
  • Place the chocolate in a deep bowl. Better yet, put it in a glass! This will make it easier to dip the balls in.
  • Instead of balls, you can also shape them into bars or squares. Just press the warm mixture into a rectangular pan lined with parchment paper and slice them once cool.
  • This recipe calls for creamy peanut butter, but you can also use crunchy peanut butter for even more texture. Avoid greasy peanut butter, though. If it’s too oily, it will be difficult to coat the balls in chocolate.
  • You can experiment with other kinds of nut butter, too. I’ve tried this recipe with almond and cashew butter, and it turned out fantastic!
  • For chocolatier balls, use Cocoa Krispies instead of regular ones.
  • The recipe requires melting the chocolate in a double boiler, but the microwave works, too. Just remember to use a microwave-safe bowl, and to heat the chocolate in 30-second intervals. Stir the chocolate after every 30 seconds and stop heating until it’s smooth and completely melted.
  • Do not use granulated sugar in place of powdered sugar, otherwise, the balls will be grainy.

How to Store Peanut Butter Rice Krispie Balls

Place the balls in a Ziplock bag or an air-tight container. Store them at room temperature for up to a week.

Rice Krispie balls are at their freshest during the first two days, though! After day two, they’ll start to get softer, but will still be delicious.

You can also freeze the balls for a longer shelf-life of about 6 months. Place them in a freezer-safe bag, squeeze out as much excess air as you can, seal, and freeze.

Thaw in the fridge or at room temperature until soft enough to bite. They will sweat slightly, but will still taste delicious.

Ingredients

  • 2 cups 2 creamy peanut butter

  • 1/2 cup butter

  • 4 cups 4 powdered sugar

  • 3 cups 3 Rice Krispies

  • 2 cups 2 semi-sweet chocolate chips

Instructions

  • Place the peanut butter in a saucepan over low heat. Stir until the peanut butter is melted.
  • In a large bowl, stir the Rice Krispies and powdered sugar until combined.
  • Pour the melted peanut butter and butter over the cereal-sugar mixture and mix until combined.
  • Shape the mixture into 1-inch balls and place on cookie sheets. Refrigerate until the balls are firm. You can refrigerate the balls overnight.
  • Melt the chocolate in a double boiler. Dip the balls in the chocolate and gently roll with a spoon until completely coated. Place the dipped balls on cookie sheets.
  • Chill the balls until the chocolate is firm. Enjoy!
