This blueberry coffee cake is your morning’s best friend: sweet, soft, and irresistibly crumbly.

Ingredients

  • For the Crumb Topping
  • 1/2 cup 1/2 granulated sugar

  • 1/4 cup 1/4 all-purpose flour

  • 1 teaspoon 1 ground cinnamon

  • 1/4 cup 1/4 unsalted butter, cold and cubed

  • For the Cake
  • 2 cups 2 all-purpose flour

  • 1 1/2 teaspoon 1 1/2 baking powder

  • 1/2 teaspoon 1/2 baking soda

  • 1/4 teaspoon 1/4 salt

  • 1/2 cup 1/2 unsalted butter, softened

  • 3/4 cup 3/4 granulated sugar

  • 2 large 2 eggs

  • 1 teaspoon 1 vanilla extract

  • 1/2 cup 1/2 sour cream

  • 1/2 cup 1/2 milk

  • 2 cups 2 fresh or frozen blueberries (if using frozen, do not thaw)

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Grease a 9-inch square baking pan with non-stick spray.
  • Make the crumb topping. In a bowl, combine sugar, flour, and cinnamon. Cut in the cold butter with a pastry blender, two forks, or your fingers, until the mixture resembles coarse crumbs. Set aside.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a separate large bowl, beat together softened butter and sugar with an electric mixer until light and fluffy, about 3-5 minutes. Beat in the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  • Add the flour mixture in three parts, alternating with the sour cream and milk. Begin and end with the flour mixture. Mix until just combined. Gently fold in the blueberries.
  • Spread the batter into the prepared baking pan. Sprinkle the crumb topping evenly over the batter.
  • Bake for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean or with a few crumbs.
  • Remove the cake from the oven and let it cool in the pan on a wire rack for about 10-15 minutes. Then, transfer it from the pan to the rack to cool completely or serve it warm.
